I’m grateful for popcorn, just a simple, humble snack, easily accessible, but incredibly satisfying. I like to pour kernels into a paper lunch bag and microwave for 2.5 minutes, no oil, then add a little butter and salt and maybe some spices like chili powder or cayenne pepper and you have a bowl full of crispy buttery heaven. It’s one of those little things that make life just a tiny bit easier to bear when you feel down – popcorn makes me happy.
