Being diabetic I need to be very careful about what foods I eat; starches such as bread, rice and pasta are on the bad list and I’ve done my best to cut them out of my diet. However, this makes it difficult to satisfy those taste and texture cravings which rely upon those foods, so I’m grateful to have discovered the riced cauliflower craze. You can use cauliflower to make dishes such as fried rice, sushi, and risotto, and it can be baked into a bread-like crust for quiche or pizza – I understand it can also make a tasty rice pudding!
Last night I made a pizza using a cauliflower crust with marinara, mozzarella, pepperoni, mushrooms and olives – it was delicious! (The recipe above called for panko crumbs, but you can omit them as I did if you want your crust to be gluten free) And if it seems too work intensive to chop cauliflower into crumbs, it can be food processed or I recently discovered that you can purchase pre-riced cauliflower at CostCo and in some grocery stores.
